Mema's Blueberry Muffins

Muffins

1 1/2 c. plain flour
3/4 c sugar
1/2 t. salt
2 t. baking powder
1/3 c. vegetable oil
1 egg beaten
1/3 c. milk
1.5 c fresh or frozen blueberries

Preheat oven to 400 degrees F. Grease muffin cups or line with muffin liners.

Combine 1 1/2 c flour, 3/4 c sugar, salt and baking powder.

Place vegetable oil into a 1 c. measuring cup; add the egg and enough milk to fill the cup.

Mix liquids with flour mixture.

Fold in blueberries.

Fill muffin cups 2/3 full.

If desired, sprinkle with streusal topping mixture. (Mema says: I never do the topping because we have enough sugar in the muffins for my taste.)

Bake for 20-25 minutes in preheated oven, or until done.


Streusal Topping (optional)

1/2 c white sugar
1/3 c plain flour
1/4 c butter, cubed
1 1/2 t ground cinnamon

Mix with fork and sprinkle over muffins before baking.
