Amber's Banana Chocolate Chip Muffins

I've been using this recipe for most of my married life and still love them.  They are sweet and satisfying, they freeze well, and make a great snack.  I often make a large batch of at least two dozen muffins and 1-2 dozen mini muffins.



     In a large bowl, combine:
4 mashed ripe bananas
1 cup brown sugar
1/2 cup vegetable or coconut oil (or 1/4 cup oil + 1/4 cup applesauce)
1 egg



     In a medium-sized bowl, combine:
1 cup white flour
1 cup wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt



     Add the dry ingredients to the wet and stir.



     Add:
1/2 cup sour cream or plain regular or Greek yogurt (I usually use Greek yogurt)
1 Tbs vanilla (yes, it's a lot)
1/2 cup mini chocolate chips


     Bake at 350 for 18-22 minutes.
