Megan's Macaroni & Cheese

I was impressed when my frien Megan whipped this homestyle mac & cheese up while my kids and I were hanging out at her house at lunch time one day.  It's been a staple in my house ever since.

2-4 cups macaroni or small shells (depending on how cheesy you want the pasta to be)
1/2 cup butter
1/2 cup flour
2 cups milk
2 cups grated sharp cheddar cheese (or more)
garlic salt to taste

Boil pasta.

Melt butter in a medium-sized sauce pan.  Whisk in flour and stir until you create a smooth roux.  Stir in milk.  Stir cheese in until melted.  Add garlic salt or other seasonings as desired.  Continue to stir over low heat until it thickens to your taste.

Once sauce and pasta are ready, stir together and serve.

Make-Ahead Option: Pour the prepared macaroni & cheese into a greased 9x13 baking dish.  Top with Italian bread crumbs and refrigerate.  Bake at 350 for 20 minutes or so.


I've never gotten creative with cheeses and seasonings, but the flavoring combinations are endless.
