Our Favorite Monster (Energy) Balls

2 cups quick oats
2/3 cups flaxseed meal
1 1/3 cup creamy peanut butter
1/2 cup honey
dash of vanilla extract
Pinch of salt
1 container mini M&Ms

Stir together dry ingredients, then add in peanut butter and honey.

Gather portions of the mixture using a cookie scoop, roll into a tight ball, and place on a parchment-lined pan.

Refrigerate or freeze until ready to eat.

Note: M&Ms are not essential, and could easily be omitted or subbed out for craisins, coconut, (mini) chocolate chips, or chopped nuts.  But we really like the M&Ms...
