Yummy Instant Pot Creamy "Baked" Pasta
Takes approximately 35 minutes, start to finish.
Easily feeds a family of 6.
1/2 or 1 pound ground sausage
2 cups chicken broth
2 cups cream
1 1/2 tsp. salt
1/4 tsp black pepper
2 cloves minced garlic
16 oz. penne, ziti, or other bite-sized pasta
15-oz. can crushed tomatoes
1 1/2 tsp. dried oregano
1 1/2 tsp. dried basil
1/2 to 1 cup freshly grated Parmesan cheese
Fresh basil, for serving (optional)
1. Brown sausage in the Instant Pot on the "saute" setting. Soak up grease with a paper towel the best you can.
2. Pour in the broth, cream, salt, pepper, and garlic. Stir it up well, loosening the bits cooked on to the bottom of the pot.
3. Add the pasta. DON'T STIR but arrange it into an even layer on the top.
4. Pour the crushed tomatoes evenly over the pasta and sprinkle the oregano and basil over the top. Don't stir.
5. Secure the lid of the Instant Pot, set the valve to seal, set to pressure cook, and set the cooking time. Determine the cooking time by checking the time required on your pasta. Look for the "al dente" time required, that that in half, and subtract two more minutes. Pasta that cooks al dente in 12 minutes on the stove should be set to 4 minutes in the Instant Pot.
6. Let the pressure release naturally for 10 minutes and then quick release the remaining pressure.
7. Stir in the Parmesan cheese. Serve immediately, topped with chopped fresh basil and additional Parmesan if desired.
Mel suggests: For an extra saucy pasta, add 1/4 to 1/2 cup extra broth, cream, or crushed tomatoes.
