Flavorful and Hearty Fried Rice


1. Fry 6 pieces of bacon in a large Wok-like frying pan.

2. Remove the bacon and cook half of an onion (diced), a package of frozen peas & carrots (thawed), and whatever else you want to throw in there (such as some leftover diced bell pepper, or green beans, or zucchini if you're feeling really brave - I haven't gotten quite that brave yet but I think it's coming).

3. Remove the vegetables and break 6 eggs into the frying pan.  Quickly scramble them in whatever grease is still on the pan.

4. Once the eggs are cooked, add vegetables back in, and stir in any meat you would like to include, such as leftover teriyaki chicken, diced ham, shrimp, whatever.  Or leave the meat out.  That works too.

5. Stir in 4-6 cups of cooked rice (from 1.5-2 cups of dry rice) and 6 TBS or more of soy sauce.  Finally, top with diced green onion, the crumbled bacon from step 1, and a healthy sprinkling of sesame seeds.
