Oven-Baked Scrambled Eggs
An easy way to make eggs for a crowd - and it turns out so fluffy!
1/2 cup butter, cut into smaller pieces
24 eggs
2 1/2 tsp. salt
2 1/2 cups milk
Place butter pieces in a 15x10 baking dish and put the dish into the oven. Preheat the oven to 350 to melt the butter while mixing the eggs.
In a large bowl, whisk together eggs and salt until well blended. Gradually whisk in milk.
Pour egg mixture into the baking dish.
Bake for 25-30 minutes, stirring halfway through.
The original directions instructs that you use a 9x13 baking dish but I found that too small for the full recipe - it would spill when I tried to get the dish into the oven and when I had to reposition it for stirring. So, if you do not have a bigger baking dish I'd recommend making a smaller portion of the recipe, or dividing it into two smaller dishes.
