Oven Chicken Fajitas

1 large onion
1 medium bell pepper
1 lb. boneless skinless chicken breasts
2 Tbs. vegetable oil
fajita seasoning (see recipe below)


Heat oven to 400.  Spray 9x13-inch glass baking dish with cooking spray.

Cut onion and bell pepper into even slices and place in baking dish.

Cut chicken breasts into thin strips and add to vegetables in the baking dish.

Add seasoning and oil to the vegetables and chicken, and stir until all pieces are coated.

Bake for 35-40 minutes, stirring once halfway through baking, until chicken is cooked through.

Serve with tortillas and top with sour cream, salsa, guacamole, shredded lettuce, cheese, etc.

This recipe works well for a crowd, as you can triple it and cook it in two 9x13 pans side by side in the oven.  You can also cut everything in advance, then just stir it together and bake it when needed.

Seasoniong Mix

1 Tbs. cornstarch
1 tsp. chili powder
1 tsp. salt
1 tsp. paprika
1 tsp. sugar
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. cayenne pepper

This is plenty for the above recipe, but adjust the amount you use according to taste.
You could also make extra to have on hand for next time.
