Zucchini Bread
My good friend Kathryn gave me this recipe about 15 years ago and I've used it many times over the years, making a few modifications as noted. This is a delicious recipe that's great as-is, or topped with softened butter, or toasted with cream cheese. I usually make 4 mini loaves.
3 eggs
1/2 cup oil
1/2 cup applesauce
1/2 cup oil

1 1/2 cup sugar
2 cups white flour
1 cup wheat flour
2 cups grated zucchini
1 Tbs. vanilla
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt

Preheat oven to 350° and oil pan(s).
Beat eggs.
Add oil, applesauce, sugar, and mix.
Mix in all other ingredients.
Bake for 1 hour.
